TWO MORE MONTHS: Anticipation for Philly Style Bagels Builds as Opening Approaches


In eight weeks, Philly Style Bagels — known for a promotional video with a digital bagel running to techno tunes — will open its doors at 1451 E. Columbia Ave. in Fishtown.

This permanent location is a mere ten-minute walk from Pizzeria Beddia (recently named as home of the best pizza in the U.S.) where Philly Style Bagel owners Collin Shapiro and Jonathon Zilber have held a Sunday pop-up for over a year. All proceeds from the Sunday pop-ups have gone toward funding the setup of the new brick and mortar shop.

This bagel business is not only known for its savvy video, but also for a new style of making their baked goods. Beer is poured into the kettle water used to boil bagels — locally brewed Yard’s IPA, to be exact. Owners Shapiro and Zilber write on indiegogo.com that using Yard’s IPA in their recipe is a “homage to the great beer culture of Philadelphia.”

According to the bagel entrepreneurs, the bagels are cooked in a Montague Hearthbake 252-P oven, making a “very crusty” product. They will also be seeded on both sides and batches are made throughout the day to ensure fresh bagels “even for the late-risers.”

Eater.com reports that customers can anticipate Counter Culture coffee in the shop. In their Indiegogo campaign, Shapiro and Zilber name themselves as “experienced baristas” with years spent working at Shot Tower Coffee in Philadelphia making a promise of “excellent coffee.”

Philly Style bagels is anticipated by the local population as well as multiple Philadelphia media outlets, like Philly.com, Philly Mag, and Zagat.com who listed Philly Style Bagels as one of the “10 most anticipated fall restaurant openings in Philly.”

Shapiro and Zilber write they look forward to their business becoming part of the community on their Indiegogo page. One could argue Philly Style Bagels already has. Either way, Fishtown anticipates the arrival of the fusion of crunchy bagels, quality coffee and traces of the taste of beer only available at the corner of Columbia and Frankford.
